Cobb Hill

One of Jon’s former Dartmouth professors and mentors, Donella Meadows founded the Sustainability Institute and the Cobb Hill intentional community, aimed at being an example of sustainable living. Jon had never been there and since Jorge was a farmer, it seemed the perfect place for both to visit. After missing the dirt road entrance a couple of times, they finally arrived. The maple syrup production process delighted Jorge and Olga who came to know maple syrup.

Cobb Hill

The farm produces Vermont Fancy grade maple syrup. Farmers tap trees up in the forest and the sap flows downhill through the tubes to the boiler. It takes 40 gallons of sap to make 1 gallon of syrup bought in the store.
